Cheddar Beer Dip
Our cheesy cheddar beer dip will have you dipping anything crunchy and everything crunchy, and you might even use your fingers to suck up all the yummy flavor! Use dark, light, or non-alcoholic beer in this easy cheddar and beer dip recipe!
Ingredients
- 2 T. Butter
- 2 T. Flour
- 1/2 c. Whole milk
- 1/2 c. Beer (we suggest dark, but you can use light or non-alcoholic too)
- 2 t. Dijon mustard (honey mustard is good with light beer)
- 1/2 t. Smoked paprika
- 2 oz. Cream cheese
- 8 oz. Sharp cheddar cheese, shredded (shred it yourself if possible for the best experience)
- Sea salt and black pepper, to taste
- Thinly sliced scallions for serving (optional)
- Bacon pieces (optional)
- Pretzels and crusty bread for serving (and see list in a blog post for other dippable
Instructions
- Melt butter in a medium saucepan over medium heat.
- Add Flour and cook, stirring constantly, for 1-2 minutes, just until the raw flour
taste cooks out. It will turn into a thick paste. - Slowly pour in the milk, stirring constantly.
- Continue cooking until the mixture thickens, 1-2 minutes.
- Stir in the beer, Dijon, and smoked paprika.
- Continue cooking for another minute.\
- Stir in the cream cheese and sharp cheddar cheese.
- Continue cooking and stirring constantly until the cheese has melted. \
- Taste and adjust the seasoning with salt and pepper, if needed.
- Transfer to a serving dish and top with optional items: scallions, bacon bits, etc.
