Easy Shrimp, Avocado & Feta Salad
I always have cooked shrimp, peeled, ready and waiting for me in a container in my refrigerator. Preparation of shrimp ahead allows me to simply prepare a recipe without waiting for an ingredient.
My personal suggestion is to make sure your shrimp is thawed ahead of time, and that you have allowed it to drain the water by pressing lightly with a paper towel. In my opinion, water in a shrimp is disgusting and takes away from the taste.
Let’s create this deliciously easy meal that takes minutes and can be served as a side, for a meal, or at any party when made in larger quantities. Please note this recipe is for a single lunchtime serving.
Easy Shrimp, Avocado & Feta Salad
INGREDIENTS
1 Small Roma Tomato Sliced
2 Tbsp Feta Cheese
8 Cooked Shrimp, Cut into 1/3’s
1 Avocado cut in 1/2
1 Tbsp Hot Sauce
1 Tbsp Olive Oil
METHOD
Place all items on a dish and lightly toss with Olive Oil and Hot Sauce.

So, for me this is a spectacular feast, perhaps because I am watching my sugars and trying to keep them well-balanced. To easily adjust this recipe, add less tomato, or increase your avocado, you could even add in beans and if you want corn tortilla chips.
The flavor is outstanding, and if you do not like hot sauce, try chipotle for a ‘lighter’ hot taste. Oil, vinegar, lime, lemon, it is all about the taste. Sprinkle the combination with cilantro, chopped celery and any of these additions will make you swoon for more.
