Ingredients
- 4 Tablespoon, extra virgin. olive oil (1/4 c)
- 1 Large eggplant, peeled and chopped (about 2 pounds)
- 4 Large tomatoes, peeled, seeded and chopped (or one large can of diced tomatoes)
- 2-3 Medium garlic cloves, minced
- 1 Tablespoon. smoked Paprika (for a smokier taste + optional)
- 1 teaspoon. liquid smoke
- 1 teaspoon Ground cumin
- 1/4 c. Water (if needed)
- 1/2 c. fresh parsley, chopped or (1/4 C Cilantro + 1/4 C Parsley)
- 1/2 Fresh lemon, lightly zested and juiced
- Mediterranean Sea salt and black pepper to taste
Instructions
- Heat a medium-sized covered pot or Dutch oven over medium heat.
- Add olive oil and eggplant (as is or prepared with any of the methods below under exploring exciting cooking options for the eggplant)
- Add in tomatoes, garlic, Paprika, and cumin.
- Bring to a gentle simmer (but don't place the lid on)
- Season liberally with Mediterranean salt and pepper to taste
- Now, cover with a lid, letting the flavors mingle and dance, until the eggplant and tomatoes become very soft, about 25-30 minutes (please note if you have already cooked the eggplant, it will already be soft).
- If the tomatoes are playing hard to get and not releasing enough juice, introduce a splash of water - two tablespoons at a time, up to 1/4 cup.
- Once softened, mash (coarsely) the eggplant and tomatoes with a potato masher, integrating them into a harmonious blend.
- Stir half of the fresh parsley (BUT keep the other half for the grand finale!)*
- Splash the lemon juice and stir it into the aromatic medley.
- Keep cooking for 5-10 minutes or until the dip has thickened to your desired consistency.
- Remove from heat
- Embellish with a drizzle of olive oil, the remaining parsley (and cilantro if used), and the zest of the lemon.
- Serve this beauty immediately with crusty bread for dipping (or any of the other dippable we suggested)

Notes
*do the same for the cilantro if you are adding it; only add 1/2 during the cooking process and reserve the rest for a truly Popping flavor after the cooking process is complete.
Cilantro is not always well-received as an ingredient, so we used and wrote the recipe with parsley. However, we make it both ways, and it turns out perfect each time. So if you don't like the taste of cilantro, you can use parsley!
