We are at the beach and well, the days just call for some quick solutions especially bright, sunny beautiful days when I linger outside way beyond a few hours and spend time on the beach collecting shells, and frolicking in the water and sand. Dinner time seems to quickly creep up on us and while we need to eat, my motivation is just not really there to cook and create. I love the fresh taste of peas and onions together, but when you add the zing of bacon drippings to the mix you suddenly heighten the level of pea sophistication. So, how does one create a more sophisticated pea taste, yet yield less time in the kitchen? As we have been beaching it the last few days I had minimal time and offered minimal effort to get this meal just right, but, you have to see how wonderful it actually turned out. There is simply no way to make this lavish meal go wrong and you can even add other veggies to the mix, but be warned, this meal is a luxury meal that you will want to indulge in more than once a week! Today I’m lavishly letting out loud creating pasta with peas and bacon and I can’t wait to share the easy recipe with you.
The kitchen in the Wyndham Vacation Rental rocked and cooking was a pleasure as I could see the Ocean View while I cooked and loved every minute of it. We shopped for the fresh ingredients at our local Food Lion, and then turned ingredients into a recipe! As my one child has severe food allergies, I choose to cook most meals while we are on vacation at the beach, so we can make sure that he can enjoy food as well. This recipe is nut free, latex free and contains no fish, based on the ingredients and products we added. You won’t believe how easy it is to create because peas are one of the easiest foods to work with as you can take them from frozen to finished in no time at all! Did you know that when you boil pasta, if you are already planning on mixing peas into the pasta you can simply place the peas in the last few minutes of the pasta boil time and get one pot happiness? Of course that does not work if you have a picky eater, and trust me I have those too. The meal I am about to share with you is 2 pot easy and so very few ingredients are necessary, you will cherish it each time you make it.
Pasta With Peas And Bacon
We just quickly gathered our ingredients at the Food Lion, in Avon, North Carolina(OBX) take a look at these awesome frozen peas that soon will be cooked! My son who has severe food allergies loves this recipe because it is one of the few things he actually can eat and indulge in. The peas have a delicious taste against the onion and I think that is the key, or perhaps it is just the bacon drippings? Whatever the case this is one of our favorite recipes.
Now it is time to get to the recipe, and oh is it easy.
Pasta With Peas And Bacon
Ingredients
- 2 Strips of Bacon
- 1 Small Onion peeled, chopped
- 1/2 Tsp Fresh Milled Pepper
- 1 Pound of Frozen Peas
- 1 1/2 Pounds of Pasta
- 2 Tbsp Avocado Oil
- A few Sprigs of Fresh Parsley Optional(Chopped)
- 2-3 TBSP of Water
Instructions
- In a Frying Pan, turn stove to Medium Heat, add Avocado Oil, Bacon, Fresh Parsley & Onions.Cover
- Once Bacon has crisped, remove and remove onions and parsley, however leave drippings and oil in pan.
- Place Peas in Pot, Cover and allow to steam on warm burner, Medium, add water, to top of peas so as not to mix with the water and spatter.
- Once warmed about 5 minutes, remove from heat and toss with onions, parsley and bacon.
- Boil Pasta. Cook till al dente. Remove, drain, rinse quickly.
- Toss all ingredients together in bowl, serve warm. Dress with Parmesan Cheese
If you are new to my site, you know I have passion for food, and cooking is something that I do every day, it is not a once in a while thing. I believe that the luxury of food is lavish and creation should not take eons, rather it should happen quickly, as too much fuss does not bring on the enjoyment. I have a very simple way that you can add a bunch of mix-ins to this if you want Protein, such as canned tuna, canned salmon, or canned chicken. I mention CANNED because these are already prepared and ready to use, but if you don’t mind cooking or are in the creative mood, a grilled or boiled chicken would be delicious through this as would grilled seafood of any sort.
Remember that a few teaspoons of delicious grating cheese would definitely add to the taste without a doubt.
