It’s no secret now, that I worked as a recipe ghostwriter for a huge, online small kitchen appliance brand for a few years.
Before that, I had my own Italian store/restaurant and I was a personal Chef for at-home and business parties.
However, the skills that matter the most to you came from time spent creating and working with small everyday essential kitchen appliances.
During that time, I created 300+ recipes, and you’ve probably even downloaded some of them for your appliances.

I literally had one of the first air fryers coming to market, as they were new, and that was my first assignment.
Of course, I experimented with any food first that you would just generally fry in a traditional fryer.
Why?
Air fryers were to be marketed as a healthy alternative to oil-frying it is only natural to start there.
Well, I went bigger and broke all the rules making chocolate cakes, muffins, chicken, then heaven forbid COATED foods which everyone advises against.

The biggest challenge is that the products had come from China, and often took time to get here.
However, the company’s HQ was in California.
Their concept of how to use the air fryer outside of how their country had used them was not going to quite translate the same here.
The food here is not quite the typical diet/lifestyle there so, while the overall concept would be the same, the traditional recipes needed to be created.
Creating recipe content with an air fryer had to be more ‘westernized’ as I was told and well I went all in, because of the following reason.

Charlie (yes I’ve changed his name for the purpose of sharing) had been the test cook in-house with the small appliances I would write about.
He had a handle on the appliances naturally before they ever hit the market.
Overall he was their marketing person, but they didn’t have anyone to test run them so he was having fun, and truth be told, that’s how you learn the most.

Forget anything you’ve read in those magazine articles about what not to do, because after 5 air fryers, and a few different brands, these all have one thing (at least to date) in common.
- preheat the air fryer
- brush the nonstick baskets with oil (that can be in high temperatures)
- line the basket when possible with the appropriate air fryer liners so cleanup is easier overall
- you can fry coated food because I have, do and have shared content
- never stop trying different foods, becasue everything from an egg to cakes works in an air fryer, even air fryer bread!
1 Secret Step to Yummy Sweet Potato Fries Makes a Grand Difference
Once you clean and optionally peel your sweet potatoes, you’ll slice them.
It’s this 1 secret step to yummy sweet potatoes fries that separates the soggy from the crisp and light!
You will choose to either soak sweet potatoes in cold water in the refrigerator for between 30 minutes to 8 hours.
When I make them, I soak them about 2 hours, if I am rushed I’ve soaked the sweet potato fries for just 30 minutes.
Yes, I have been happy with both scenarios. and I have soaked them for 8 hours as well and that is when it is a Sunday and I am home and prep in the morning and cook in the afternoon.
Once soaked, you will drain the sweet potatoes then, allow them to be pat dry with a paper towel.
We don’t want moisture in the air fryer.
Break the Rules for Sweet Potato Fries In The Air Fryer
Next, you will have 2 choices, to make.
As I’ve stated, whoever said NOT to use ANY oil is incorrect.
I want to share 1 other big point about this recipe for air-fried sweet potatoes.
Air Fried Sweet Potatoes Lightly Salted Please
Either place some oil on a pastry brush and swipe each fry then hit it with a little sea salt or you can quickly put them in a bowl with some oil and then salt.
I don’t have a preference, but do not saturate the potatoes with too much oil please, just enough which is why beginners might want to pastry brush this on.
Do not oversalt your sweet potatoes.
These are delicate potatoes popping with taste when air-fried.
Air-fried sweet potatoes lightly salted will taste better than saturating with salt, just so you know!
Don’t destroy the taste with too much salt!
Also, for your sweet potato fries in the air fryer, you will want to swipe the air fryer basket (pre, pre-heating ) with some oil.
As far as oils go remember this is high heat, so grapeseed or olive oil works well.

Sweet Potato Fries Air-Fried
Ingredients
- 1 Medium sized sweet potato (washed, peeled, rinsed and sliced) double recipe if more than one person
- 3-4 C cold water in a bowl
- ¼ C Olive Oil & grape seed oil equal parts to make oil mix
- 1 Tsp Mediterranean Sea Salt
Instructions
- Fill a medium-sized bowl with 3-4 cups of water and set aside.
- Wash, Peel, and slice the sweet potato into equal sized strips.
- Place all of the strips of sweet potatoes into the bowl filled with water.
- Set this bowl aside with the sliced sweet potato fries for at least 30 minutes and they can actually remain up to 8 hours.
- WHEN YOU ARE READY TO AIR FRY THE SWEET POTATO FRIES …
- Drain the sweet potato fry slices from the water and pat dry with a paper towel.
- Preheat the air fryer for to 400° (yours may have the pre-programmed french fry button, use that)
- While the air fryer is preheating, you can either ~brush the sweet potato fries with oil and sprinkle with salt or ~you can brush them with oil and brush them with salt per batch when you place them in the air fryer.
- Transfer the sweet potatoe fries into air fryer basket.
- Program air fryer for French Fry Cycle, 400° 15 minutes.
- Remove and serve warm.

- Food : actual prep 5 minutesAdditional prep for 1 secret: 30 minutes to 8 hours

- Total Time: 1 hour to 9* hours depending on your choice
