- In a medium-large bowl, mash the ripe bananas and avocado until they’re smooth and well combined.
- Add the prepared egg replacer, maple syrup, and vanilla extract, and use a hand mixer to blend everything for a uniform mixture.
We find that mashing the avocado and banana before introducing other ingredients is best, and you could puree them also but we prefer the bit of texture left in the avocado and bananas after the mashing for clinging to the other ingredients. Totally up to you how you mash your avocado banana cookies!
Combine The Wet And Dry Ingredients
- Add in the spices, and you can add more or less to your taste preference.
- As you combine the ingredients go slow, and make sure they are mixed, to get a batter consistency.
- Adjust the amount of almond flour if needed to achieve the desired batter texture. (too wet add a tad more almond flour or add more oats.
A Side note: if you are adding more almond flour we suggest adding a dash more of your favorite spice (nutmeg, cinnamon, pumpkin spice) whatever it is because the almond will take from the current spice.
The avocado almond cookies have a very different textured batter, it is not as tight as a typical cookie having something to do with the wet ingredients and the almond flour, so don’t expect a tight, dry batter, it will be more tacky. However, the batter will easily scoop and we suggest releasing with with a scraper from a spoon. (that’s how we do it)

- Line a baking sheet with parchment paper to prevent sticking (we mentioned this already)
- Use a soup spoon to scoop portions of the cookie dough onto the parchment. You can double up the portions to make them large, roughly the size of a golf ball.
- Drop each scoop with very little space between (these hardly spread)
- Flatten each portion to the width of a typical chocolate chip cookie using the back of the spoon or your hands (freshly washed and lightly sprayed with non-stick spray).
Dana’s Notes: Shaping The Giant-Sized Avocado Almond Cookies
- The batter is tacky but scoops beautifully, lightly spray your spoon on time and use a scraper to drop
- Don’t space much at all on the cookie tray the avocado banana cookies don’t spread (the ingredients are why)
- You’ll want to flatten the cookie to the width of a chocolate chip or you won’t have monster-sized but instead Width-Wise thick cookies that will take longer to bake (not a fan)
- You could shape 2 dropped scoops into a bar (as much as possible) by squaring it off, leaving it width-wise fat and baking longer.
- You can use a sprayed spoon and hold the parchment paper while pulling the spoon across the top of a cookie to flatten and spread into a circle (roughly a circle)
- If you don’t want to use a spoon to spread the cookie thinner and round, keep a basting brush nearby and on your freshly washed sanitary hands, run the brush across your hands and fingertips, then smash the avocado almond cookie to the width preferred and shape it.
Adding Pumpkin Seeds (Pepita) To The Avocado Almond Cookies
Next, you’ll use those pepita seeds on top of the avocado almond cookies, but I press them in a bit because they won’t bake in if you don’t.
