Best Sausage and Tortellini Soup
Sausage is such a versatile and non-seasonal food that it simply can be made for every season.
From Thanksgiving stuffing to 4th of July BBQ’s, sausage has a place at every holiday and ever party.
One of my favorite recipes, handed down and tweaked is my Grandmother’s sausage and tortellini soup.
When I tell you that I tweaked the recipe, I mean that rather than cooking it in a soup pot on the stove I cooked it in my Instant Pot DUO Pressure cooker.
Suddenly a recipe already known as the best sausage and tortellini soup in our family is now phenomenal and fast!

The recipe can be made in an Instant Pot or ANY electric pressure cooker, (let’s not be snobby about a brand, lol!)
INGREDIENTS
Your ingredients do not have to match my brands, I just showed you what I used in case you wanted to see.
As always, we all have our favorite brands, use them, they work too.
That’s the beauty of the recipe, you can sub in whatever brand you want and it will STILL taste delicious! Let’s cook, shall we?
3 Tbsp Garlic Minced
6 Sweet or Hot Sausage links (your preference), chunked into nubs.
1 Yellow Onion, peeled and chopped.
Red Bell Pepper (Medium), rinsed, cored, chopped.
6 Tbsp Olive Oil
32 Oz Beef Broth
2 Packages of 16 oz Frozen Tortellini (boiled, drained and placed in bowls)
28 Oz of Tomato Sauce
5 Cups of Water
1 Pork Sausage Roll (refrigerated section like Jimmy Dean or Bob Evans)
1 C of Escarole chopped to garnish
METHOD
Plug in Instant Pot.
Add olive oil, pepper, garlic, and onion.
Select Saute (normal)
Once it begins to saute, add in sausage link chunks.
(mine has been cooking and that is why the image is steaming!)
Then add in the sausage roll, making sure to break it up as you saute.
This is the step to brown the meat and seal in the juices.
I suggest making sure that the sausage is ALL cooked before moving on.
What I am suggesting is that you really make sure all the pieces are crumbled and browned.
After that, you can move on.
After the meat is no longer pink and veggies are translucent CANCEL Saute mode.
You are just lightly cooking the veggies, the Instant Pot will do the work when you cook the recipe as well.
Now, add sauce, water, and broth. Make sure to stir it all, so that it combines nicely.
You want this combined so that when it cooks all the soup evens out with flavor.
If you do not mix the ingredients will not come together.
Place Instant Pot lid on.
Make sure to close the valve for no venting.
Program with the SOUP button.
Once it is done, touch CANCEL and unplug, allow to cool or release steam ( I prefer to wait)
Dish out soup into pre-prepared bowls (containing tortellini that has been cooked)
Dress with escarole and shaved parmesan.
