How To Make The Italian Potato Salad
For this recipe you will now learn that I do not boil the potatoes, instead I use my pressure cooker, so here we go!
Step 1: Prep the potatoes made in the pressure cooker
It’s all about the potato prep and for this recipe, I use my Instant Pot (Electric Pressure Cooker.
The potates made in the pressure cooker are easy to work with because I simply steam the potatoes, rather than boil them and the skins stay right on the sucker!
Scrub your potatoes and give them a few jabs with a fork tine or make an ‘x’ in the middle of the potato, all so that as the pressure rises in the pot, the potatoes will not explode!
Put just enough water into the Instant Pot but it should not cover your wire rack insert.
Rest the potatoes on the wire basket, with the water below it, place the lid on and program the pressure cooker to steam.
Step 2: Prepping the Red Onions with Celery And Olive Oil
You’ll want to slice up the tomatoes and set them to the side.
Next you will chop the celery and the celery leaves (if your stalks have any), as the celery leaves are vital to the taste of the salad and you won’t want to miss the flavor that they add, then set it aside.
Chop up the red onion into fine pieces (unless you like hunks of red onion) and set it off to the side.
Step 3: Continue Preparing the Egg-Free Salad Working With The Steamed Potatoes
Once the pressure cooker is done steaming your potatoes, and the pressure is released, remove the lid (carefully).
Place a colander in the sink, and drain the pot with the potatoes.
Immediately run cold water atop the potatoes, to get them to stop cooking and steaming and in order that you can work with the potatoes.
On a cutting board, you will cut the large potato pieces into bite-size cubes and place them into a large bowl.
Repeat this for all of the remaining potatoes.
Step 4: Combining the Italian Picnic Salad
With the steamed potatoes cubed and portioned in the large bowl, you will now begin combining all of the vegetable ingredients that you have placed off to the side.
Start by adding in the chopped red onion and then add in the tomato.
Next you’ll add in the celery.
Step 5: Next Add Spices in the Potatos and Tomatoes Mixture
Now it is time to add the flavor into the dish as if the fresh tomatoes, onions and celery didn’t bring enough to the salad party we are going to amp it!
You are in control of how much or how little you want to add in, however I will share this one piece of vital information.
Unlike most recipes that I prepare, this recipe, is one where my salt shaker makes a full on appearance.
Without salting this recipe, the potatoes are bland, therefore salt is a component of the spices in the potatoes and tomatoes portion of the recipe that is a key essential.
In fact, salt brightens the flavors of the red onions and celery with Olive oil, once it all comes together!

Ingredients
- 4 Medium Gold Potatoes
- 2-3 Roma Tomatoes rinsed, chopped.
- 1/4 C Red Onion peeled and Choppped
- 3 Stalkes of celery, chopped and some with leaves.
- 2 Tsp of Mediterrearnc Salt
- 1 Tsp Fresh Ground Pepper
- 1/4 - 1/2 Extra Virgin Olive Oil
- 1 Tbsp Italian Spice Mix
Instructions
- Using a large bowl, place the cubed potatoes inside.
- Follow with the chopped red onion
- Then add the celery
- Now add the tomato.
- Add the salt
- Then add the pepper
- Add the Extra Virgin Olive Oil
- Add in the Italian Spices
- Mix from the bottom making sure to incorporate all the ingredients and pull up all the ingredients in the bottom of the bowl.
- Serve warm or cold.
