Noom Friendly Shrimp Scampi in an Air Fryer or Nonstick Frying Pan
Next, you will not want to add any more than 1 tablespoon of olive oil overall and you won’t need to if you use what I am sharing (plus it’s no longer NOOM GREEN with the oil!)
I know you want to use more olive oil, but there’s no need, and if you use a nonstick pan, you won’t need oil!
Mixing together seafood with fresh zucchini noodles (zucchini noodles ) is fabulously fresh and tasty! The air fryer and the nonstick frying pan make this meal possible!
Plus, using either, you will have a meal made rapidly because I am about to share secrets that make this awesome!

So this is a recipe to use with the NOOM lifestyle or when you want a better alternative to pasta with your scampi!
Fabulous happens when you leave the complexity out of a recipe and keep it to basics like veggies and shrimp.
More specifically zucchini noodles and shrimp.
Now zucchini noodles are merely those zucchini noodles that look like spaghetti but don’t have anywhere near the carbs!
Do you realize that a zucchini offers a nice refrigerated shelf life UNTIL you cut it? It’s true.
Stocking a few in the refrigerator compartment drawer for veggies keeps zucchini at its best for spiralizing.
Since I don’t eat meat but I will consume certain seafood, and shrimp is one, it’s always on-hand.
Zucchini Noodle Options for my Noom Friendly Shrimp Scampi
Zucchini Noodles are simply zucchini noodles and I make them almost 5x a week!
Adding zucchini noodles to this Noom friendly Shrimp scampi is just makes it so much lighter and tastier, IMO.

If you are trying to convince yourself to take the leap and eat better, try this gradual changeover.
Please note it is NOT the green Noom friendly shrimp scampi, but it’s a good chance to taste test and play with ingredients.
Bulk up a very small portion of pasta with zucchini noodles!
Use more zucchini noodles than pasta.

The key to Zucchini Noodles is NOT to overcook.
Saute them quickly enough to soften, yet hard enough that they will still twirl.
My golden standard is always literally a ‘bead’ of olive oil swirled with a pastry brush in a NONstick pan and fresh cloves of garlic or minced garlic. Mmm!

Easy the shortcut you’ll love!
Purchase fully cooked, deveined shrimp.
That’s the short and sweet version.
Make sure you have rinsed your shrimp and they are dethawed.
I actually use warm water and then a few paper towels, I hate that excess water.
Garlic + Lemon Fo the Win: Noom Friendly Shrimp Scampi Almost!
Your success in this comes with first cooking the garlic, tossed with the shrimp, and a bit of the dressing.

My Preference Cooking Noom Friendly Shrimp Scampi Almost
I prefer cooking this meal all in the air fryer, it is faster and always more consistent.
Note that I do provide the how-to in a skillet, it’s just easier in the air fryer!
Fresh, Fast & Meatless
For those of you who are seeking a meatless meal, and simple ingredients, this is YOUR new go-to recipe.
Consider this a full meal, perfect for guests or small plate options.
It cooks inside of 15 minutes and uses simple ingredients many of us that don’t eat meat, already have in our refrigerators or freezers.
Presentation is everything, so when you are done cooking, plate the zucchini noodles first.
Then, place the shrimp around the plate and a few in the middle.
You can dress this up with some grating cheese if you like.

Shrimp Scampi Almost With Zucchini Noodles
- FOR ZUCCHINI NOODLES
- 2 C Large Zucchini Noodles
- 1 Garlic Clove peeled and sliced or 1 Tbsp Minced
- nonstick oil in fryer basket
- Salt and Pepper To Taste
- *Optional Red Pepper Flakes if you like a little heat!
- FOR THE SHRIMP SCAMPI
- 9 Fully cooked Shrimp deveined shrimp, tail on, Defrosted.
- 2 Garlic Cloves (or Minced Garlic ) peeled and sliced.
- Salt and Pepper to Taste
- 1 tbsp Vinagrette (Braggs or Walden Farms)
- 1 tbsp Capers (drained)
- 1 tbsp Lemon Rind grated with zester
- Dash of freshly milled pepper optional
- preheat air fryer to 400°F (for skillet method see notes below)
- Treat air fryer basket with non stick spray
- add in combined garlic and zucchini noodles
- cook for 5 minutes then remove basket. Drain zucchini water and level out zucchini noodles
- replace basket and cook for 4-5 minutes more.
- Remove. Sprinkle with salt and pepper to season. Set aside
- Next, in the air fryer basket place the shrimp, and garlic. (reserve if any the marinade for After the shrimp come out of the air fryer and toss it onto the warm shrimp)
- Allow mixture to begin to cook a bit and garlic to soften slightly (about 5 minutes)
- Air Fry for 4 minutes on 400°F
- Open, mix, and remove from air fryer basket.
- toss in capers.
- place atop zuccini noodles
- add a quick zest of lemon
