I’ve been making brookies for years, and every time I make a brookie, I change the cookie I add too. Our favorite however is still that infamous chocolate cookie that starts with an ‘O’!

To Make Halloween Brookie Eyeball Treats You Will Need:
A brookie pan
By the way, you will note that I didn’t say I make homemade brownies for these because life moves too fast to take the extra time to handcraft brownies that are already perfection in a box!
Don’t worry you will yield, consistent results every time.
The Brookie Broken Down
I’ll be biased for a moment about owning a brookie pan, get one.
I love the setup of the official brookie pan, and how it is nonstick (well…).
This is my favorite Brookie pan, but the runner-up is this one and it too is quite good at its craft, lol!
The cavities of both of these pans are just deep enough to get the brookie perfect without losing the cookie.
Tips + Baking the Halloween Brookie Eyeball Treats
While the shape of the brookie never fails, always coat the pan with nonstick even if it is nonstick!
I always cover my cookie,
No, you are not supposed to, but I do and darlings I don’t care what anyone else does, because I’ve made these at least 25x and it works! FUlly cover the cookie.
In this particular case, you want to FULLY cover the cookie.
You will bake the brookie, allow it to FULLY cool, and then remove it from the pan.
Cooling is the most important part of this recipe.
Modifications to the Brookie Eyeball Treats
For those of you that love caramel, grab those caramel bites and drop a few in each cavity.
If you prefer to add in some rice cereal, go for it, as it provides a crunch.
But, I will maintain that for this recipe, keep it simple.
From start to finish the Halloween eyeball brookie should take 30 minutes (+1 hour of cooling).
Truly the active time is about 5 big minutes!
